Emily (my wife) is really excited that I started blogging.  She takes credit for getting me to start and I suppose she is correct.  I have always wanted to, and don't really have a good reason for not starting.  I really enjoy food.  I guess you could say I'm a little bit of a foodie.  This is where it gets exciting  for me in our house.  Em says she bought some Jerk Chicken at the store, and I immediately think, hmmmm, I wonder what we should make.  We (I) decided to have some jerk chicken tacos and so out on the internet I went to find some recipes.  After some thorough searching I found something that looked good.

The dinner tonight - Jerk Chicken tacos with Mango Salsa, and a side of black beans.

Many times people say they don't have time to eat healthy, they are too busy to make something, [insert excuse here].  This entire meal can be prepared in less than 20 minutes if you really want to.  How easy is that?

The jerk chicken was brought pre-seasoned from the grocery store.

So the first thing I did was make a mango salsa.  Here's what I used, but you can adjust accordingly.

  • 2 mangos
  • 1/2 red pepper
  • 1/2 red onion
  • Cilantro - maybe half a bunch
  • A little bit of jalapeno - I left it on the side to add if anyone wanted.
  • 1/2 a lime - squeezed for the juice
  • a little bit of sugar - may a couple teaspoons
  • a little bit of salt

This is a nice time to enjoy a beer.  The dog (Olliver) likes the lounging around too.

It seems like when your relaxing, the time flies and next thing I knew, the chicken was done and it was time to make the kids dinner.


The finished product was delicious.  I was going to add some raw cabbage but we forgot it at the store.  I don't know what it would have added as the dinner was awesome.    Keeping the jalepeno separate is a good idea for those who want the added heat, and those who don't.  The kids practically licked the plate clean.  

Tomorrow I'll be smoking a pork shoulder for a birthday party on Monday.
